SCALLOPED TOMATOES

Try this with your tomatoes...
Ingredients:
1 onion
15 g / 1/2 oz good dripping or margarine
450 g / 1 lb tomatoes
50 g / 2 oz grated cheese
50 g / 2 oz breadcrumbs
1 teaspoon sugar
1 teaspoon salt & pepper mix
A little butter
Method:
1. Chop the onions & cook gently in fat for about 5 minutes.
2. Skin the tomatoes.
3. Thickly slice tomatoes
4. Remove onions from heat. Add cheese & crumbs.
5. Place tomatoes in 1 litre / 1 1/2 pint greased pie - dish, sprinkle with sugar, salt and pepper between layers.
6. Spread onion mixture on top, add dot of butter.
7. Cook in moderately hot oven, Gas 5, 375 degrees F, 190 degrees C for 1/2 hour.
